Chicken Fajitas
Ingredients:
• 1 lb (450g) boneless, skinless chicken
breasts, sliced into strips
• 2 bell peppers (any color), sliced
• 1 onion, sliced
• 2 tablespoons olive oil
• 2 teaspoons chili powder
• 1 teaspoon ground cumin
• 1 teaspoon smoked paprika
• 1/2 teaspoon garlic powder
• Salt and pepper to taste
• 8 small whole wheat tortillas
• Optional toppings: salsa, guacamole, Greek
yogurt
Instructions:
1.In a small bowl, mix together the chili powder, cumin, paprika, garlic powder,
salt, and pepper.
2. Place the chicken strips in a bowl and
sprinkle with half of the spice mixture. Toss to coat evenly.
3. In a large skillet, heat 1 tablespoon of
olive oil over medium-high heat. Add the chicken and cook until browned and
cooked through, about 5-7 minutes. Remove the chicken from the skillet and set
aside.
4. In the same skillet, add the remaining
tablespoon of olive oil. Add the sliced bell peppers, onions, and the remaining
spice mixture.
Cook,
stirring occasionally, until the vegetables are tender-crisp, about 5-7
minutes.
5. Return the cooked chicken to the skillet
with the vegetables and stir to combine. Cook for an additional 2-3 minutes to
heat through.
6. Warm the tortillas according to the package
instructions.
7. To serve, spoon the chicken and vegetable
mixture onto the warm tortillas. Add optional toppings as desired.
8. Serve immediately.
