One Pot Shrimp & Fetta



Ingredients:

 - 1 pound shrimp, peeled and deveined

- 1 tablespoon olive oil

- 1 onion, finely chopped

- 2 cloves garlic, minced

- 1 can (14 oz) diced tomatoes

 - 1 teaspoon dried oregano

- 1 teaspoon dried basil

- Salt and pepper to taste

- 1/2 cup crumbled feta cheese - Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until softened.

2. Add minced garlic and cook for an additional 30 seconds until fragrant.

3. Stir in diced tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes, allowing the flavors to meld.

4. Add shrimp to the pot and cook until they turn pink and opaque, about 3-5 minutes.

5. Sprinkle crumbled feta cheese over the shrimp and tomato mixture. Cover the pot and let it sit for a minute until the cheese melts.
