Tip Tip Process

Ingredients:

- 1 tri-tip roast

- 2 tablespoons olive oil

- 2 teaspoons smoked paprika

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- 1 teaspoon dried oregano

- 1 teaspoon salt

- 1/2 teaspoon black pepper

 Instructions:

 1. In a small bowl, mix together smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper.

 2. Rub the tri-tip roast with olive oil, ensuring it's coated evenly.

 3. Sprinkle the spice mixture over the entire surface of the tri-tip, pressing it into the meat.

 Vegetables Preparation 

- 2 cups broccoli florets

- 2 cups cauliflower florets

- 1 bell pepper (sliced)

- 1 zucchini (sliced)

- 1 yellow squash (sliced)

- 1 red onion (sliced)

- 2 tablespoons olive oil

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- 1 teaspoon dried thyme

- Salt and black pepper to taste

Instructions:

4. In a large mixing bowl, combine broccoli, cauliflower, bell pepper, zucchini, yellow squash, and red onion.

 5. Drizzle olive oil over the vegetables and toss to coat evenly.

 6. Sprinkle garlic powder, onion powder, dried thyme, salt, and black pepper over the vegetables. Toss again to ensure the seasoning is evenly distributed.

 7. Preheat your smoker to 225°F (107°C).

 8. Place the seasoned tri-tip and the seasoned mixed  vegetables( tray or in a foil pan )in the preheated smoker.

9. Smoke the tri-tip for about 2-3 hours or until the internal temperature reaches your desired doneness (135°F or 57°C for medium-rare).

 10. Once done, remove the tri-tip from the smoker and let it rest for 10 minutes before slicing.

 11. For the vegetables for about 45-60 minutes, stirring occasionally, until they are tender and have a smoky flavor.

 12 Remove the smoked mixed vegetables from the smoker for the tenderness desired.
