**Ingredients:**

- 1 pound ground turkey or lean ground

beef

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1 can (14 oz) crushed tomatoes

- 1 can (14 oz) diced tomatoes, drained

- 2 cups fresh spinach, chopped

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- Salt and pepper to taste

- 2 cups part-skim ricotta cheese

- 1 large egg

- 2 cups shredded mozzarella cheese

- 1/4 cup grated Parmesan cheese

- 9 lasagna noodles, cooked according to package instructions

**Instructions:**

1. In a large skillet, cook the ground

turkey or beef over medium heat until browned. Drain excess fat.

2. Add chopped onions and minced garlic to the skillet, sauté until softened.

3. Stir in crushed tomatoes, diced tomatoes, chopped spinach, oregano, basil, salt, and pepper. Simmer for about 10 minutes.

4. In a bowl, combine ricotta cheese and egg until well mixed.
