Crockpot Cilantro Chicken Stew
Ingredients:
. 1 onion chopped
. 1 cup fresh Cilantro
. 1-1/2 cup chicken broth
. 2 garlic cloves minced
. 1/2 red bell pepper diced
. 1 carrot sliced
. 1 teaspoon Italian seasoning
. 1 tbsp tomato paste
. 1/4 cup tomato sauce
. 1/4 cup of peas
. 6 pieces of chicken thighs (skinless)
. Salt and pepper to taste
. Boiled potatoes (optional)
Instructions:
1.- In a blender, combine the Cilandro and the chicken broth, blend well!
2.- Heat the olive oil in the crockpot medium heat. Add the chopped onion and garlic. Sauté until the onion is translucent.
3.- Add tomato sauce, tomato paste, salt, pepper and mixing adding the chicken thighs to the crockpot, then pour the Cilandro blended, cover and cook on medium heat for about 20 minutes.
4.- Time to add the carrots, peas, bell pepper and Italian seasoning, stir to combine everything. Cook for 20 minutes.
5.- Serve this flavorful chicken dish with boiled golden potatoes or just a simple jasmine rice.
