Dutch Oven Beef Stew, Recipe you’ll need:
Ingredients:
• 2 pounds of beef stew meat, cut into cubes
• 2 tablespoons of olive oil
• 1 onion, chopped
• 2 cloves of garlic, minced
• 1 carrots, sliced
• 2 potatoes, diced
• 1 bell pepper, diced
• 2 cup of beef broth
• 1 tbsp of tomato paste
• 1/4 of cup tomato sauce
• 1/4 cup of peas
• 1 tablespoon of brown sugar.
• 2 tomatoes chopped
• 1/2 teaspoon rosemary
• 1/2 teaspoon oregano
• 1/2 teaspoon paprika
• 1 teaspoon of dried thyme
• Salt and pepper to taste
Instructions:
1. Preheat your oven to 350°F.
2. Heat the olive oil in the Dutch oven over medium heat. Add the beef cubes with salt and pepper and brown them on all sides. Remove the beef from the pot and set aside.
3. In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent. Add the tomatoes and sauté.
4. Return the beef to the pot. Add the beef broth, tomato paste, tomato sauce, brown sugar, dried thyme, oregano, paprika, rosemary, salt, and pepper. Stir to combine everything.
5. Add the carrots, potatoes, and bell pepper to the pot. Cook for a few minutes until they start to soften.
6. Cover the Dutch oven with a lid and transfer it to the preheated oven.
7. Let the beef estofado cook in the oven for 2 or until the meat is tender and the flavors have melded together.
8. Once done, remove the Dutch oven from the oven, add the frozen peas and let it rest for a few minutes before serving.
9. Serve the beef stew hot, garnished with chopped parsley if desired.
