Ingredients:

 

• 1.5 lbs beef hearts, trimmed and cut into cubes

1/4 cup olive oil

• 3 tablespoons chili California paste

• 2 tablespoons red wine vinegar

• 2 cloves garlic, minced

• 1 teaspoon smoked paprika

• 1 teaspoon ground cumin

• 1/2 teaspoon ground coriander

• Salt and pepper to taste

• Wooden or metal skewers

 Instructions:

 

1. In a bowl, whisk together olive oil, red wine vinegar, minced garlic, smoked paprika, chile California paste, ground cumin, ground coriander, salt, and pepper.

2. Add the beef heart cubes to the marinade, making sure they are well coated. Cover and refrigerate for at least 2 hours, or overnight for best results.

3. Preheat your grill to medium-high heat.

4. Thread the marinated beef heart cubes onto skewers, leaving a little space between each piece.
