Air Fryer Pork Chops with Chimichurri sauce:
**Ingredients:**
For the Pork Chops:
- 4 boneless pork chops, about 1 inch thick
- Chimichurri Sauce
- Salt and black pepper to taste
For the Chimichurri Sauce:
- 1 cup fresh parsley, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons fresh oregano leaves, finely chopped (or 2 teaspoons dried
oregano)
- 1/2 cup extra virgin olive oil
- 2 tablespoons red wine vinegar or apple cider vinegar
- 1 tablespoon lemon juice
- 1 teaspoon red pepper flakes (adjust to taste)
- Salt and black pepper to taste
**Instructions:**

prepare the chimichurri sauce. In a medium-sized bowl, combine the chopped
parsley, minced garlic, chopped oregano, olive oil, vinegar, lemon juice, red
pepper flakes, salt, and black pepper. Mix well to combine.
2. In a small bowl, mix, salt, and black pepper to create a marinade for the
pork chops.
3. Rub the Chimichurri all over the pork chops, ensuring they are evenly
coated.(let it marinate for a least ½ hr)

Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
5. Place the pork chops in the air fryer basket in a single layer, making sure
they are not touching each other. You may need to cook them in batches
depending on the size of your air fryer.
6. Cook the pork chops in the air fryer for20-30 minutes, flipping halfway
through the cooking time, until they are golden brown and cooked through. The
internal temperature should reach 145°F (63°C).
7. Once the pork chops are cooked, remove them from the air fryer and let them
rest for a few minutes before serving.
8. Serve the air fryer pork chops with a generous drizzle of chimichurri sauce
on top. You can also serve extra chimichurri sauce on the side for dipping.
