Balsamic Marry Me Chicken Recipe:
Merry Me Chicken |
• 5 boneless, skinless chicken breasts
• Salt and pepper to taste
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• 1 cup cherry tomatoes, halved
• 1 cup chicken broth
• 1/2 cup heavy cream
• 1/4 cup grated Parmesan cheese
• 2 tablespoons balsamic vinegar
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• Fresh Parsley leaves for garnish (optional)
1. Season the chicken breasts with salt and pepper on both sides.
2.
In a large skillet, heat olive oil over medium-high heat. Add the
seasoned chicken breasts and cook until golden brown on both sides, about 5-6
minutes per side. Remove the chicken from the skillet and set aside.
3.
In the same skillet, add minced garlic and cherry tomatoes. Cook for 2-3
minutes until the tomatoes start to soften.
4.
Pour in the chicken broth and bring to a simmer. Allow it to simmer for
5 minutes to reduce slightly.
5.
Stir in the heavy cream, grated Parmesan cheese, balsamic vinegar, dried
basil, and dried oregano. Return the chicken breasts to the skillet and spoon
some of the sauce over them.
6.
Reduce the heat to low and cover the skillet. Let it simmer gently for
10-12 minutes, or until the chicken is cooked through and the sauce has
thickened.
7.
Garnish with fresh parsley leaves, if desired, before serving.
