Easy Creamy Tortellini Pasta

Creamy Tortellini Recipe:










Ingredients:

        •       1 package (about 20 ounces) of tortellini (any variety)
        •       2 tablespoons olive oil
        •       2 garlic cloves, minced
        •       1 onion, finely chopped
        •       1 red bell pepper, chopped
        •       1 cup mushrooms, sliced
        •       1 can (14 ounces) diced tomatoes, drained
        •       1 teaspoon Italian seasoning
        •       1/2 teaspoon red pepper flakes (optional)
        •       1 cup heavy cream
        •       1/2 cup grated Parmesan cheese
        •       Salt and pepper, to taste
        •       Fresh basil, chopped (for garnish)

Instructions:

        1.      Cook the tortellini according to the package instructions. Drain and set aside.
        2.      In a large skillet, heat the olive oil over medium heat. Add the garlic and onion, and sauté until softened, about 2-3 minutes.
        3.      Add the red bell pepper and mushrooms, and cook for another 3-4 minutes, until vegetables are tender.
        4.      Stir in the diced tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for another 2 minutes.
        5.      Reduce heat to low and stir in the heavy cream and Parmesan cheese. Cook for 5 minutes, stirring occasionally, until the sauce thickens.
        6.      Season with salt and pepper to taste.
        7.      Add the cooked tortellini to the sauce, and toss to coat.
        8.      Serve the creamy tortellini hot, garnished with fresh basil. Enjoy
