Ingredients:
• 2 pounds potatoes, peeled and cubed
• 1 tablespoon vegetable oil
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 pound ground beef
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• 1 Teaspoon oregano
• 1
carrot, finely chop
• 1
small red bell pepper, Chopped
• 3
hard-boiled eggs, chopped
• Salt and pepper, to taste
• 1 cup Cheddar cheese
• parsley and cilantro to taste
• spring green onion to garnished
• 1
tablespoon of tomato paste
Instructions:
1. Boil the potatoes in salted water until tender. Drain and mash them. Let
them cool down.
2. In a large skillet, heat the vegetable oil over medium heat. Add the onion
and garlic and cook until softened.
3. Add the ground beef, cumin, paprika, tomato paste, carrots, red bell pepper,
salt, and pepper. Cook until the beef is browned.
4. Stir in the chopped hard-boiled eggs, parsley and cilantro. Remove from heat
and let it cool.
5. Take a handful of mashed potatoes and make a hand size ball with your palm, then
press it in the center with a glass, forming a nest shape mash potato. Add a spoonful(about
2 or 3 spoons) of the beef mixture in the center. Mold the potato around.
6. Add the shedder cheese on top of the nest.
7. Preheat the oven to 400 degrees or 205 Celsius for about 15 to 20 minutes.
Let it cool down before removing it from the baking tray.

Serve with favorite salad and garnished with spring green onion.
