Greek Shrimp with Orzo And Fetta

Ingredients:

- 1 lb shrimp, peeled and deveined
- 1 cup orzo
- 2 tbsp olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 cup fresh cherry tomatoes
- 1/2 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

**Instructions:**

1. Cook orzo according to package instructions. Drain and set aside.

2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3-4 minutes.

3. Add garlic and cook for another minute until fragrant.

4. Add shrimp to the skillet and cook until pink, about 2-3 minutes per side.

5. Add diced tomatoes (with their juice) and Kalamata olives to the skillet. Stir in dried oregano, salt, and pepper.

6.  Add the cooked orzo. Stir until well combined and heated through.

7. Remove from heat and stir in lemon juice and crumbled feta cheese.
