Ingredients
1 lb flank steak, sliced thinly against the grain
1/4 cup cornstarch
8 oz egg noodles or lo mein noodles
2 tbsp vegetable oil, divided
3 cloves garlic, minced
1 tsp grated fresh ginger
1 small onion, sliced
1 red bell pepper, sliced
1 cup broccoli florets
2 carrots, cut into matchsticks
1/4 cup sliced green onions
Teriyaki Sauce:
1/2 cup low-sodium soy sauce
1/2 cup mirin (sweet rice wine)
1/4 cup brown sugar
2 tsp sesame oil
1 tbsp cornstarch mixed with 1 tbsp water
Instructions:
1-In a bowl, toss the sliced
beef with 1/4 cup cornstarch until evenly coated. Set aside.
2-Cook the noodles according to package
directions. Drain and set aside.
3-Heat 1 tbsp oil in a large skillet or wok over
high heat. Working in batches, stir fry the beef until browned, about 2-3
minutes. Remove and set aside.
4-Add the remaining 1 tbsp oil to the pan. Stir
fry the garlic and ginger for 30 seconds. Add the onion, bell pepper, broccoli,
and carrots. Stir fry for 3-4 minutes until crisp-tender.
5-In a bowl, whisk together the soy sauce, mirin,
brown sugar, sesame oil, and cornstarch slurry. Pour into the pan and bring to
a simmer. Cook for 2-3 minutes until thickened.
6-Add the beef and noodles to the pan. Toss
everything together until well coated in the teriyaki sauce.
Serve hot, garnished with sliced green onions.
