Crock Pot Chipotle Beef Taco recipe for
tender, flavorful tacos that are sure to impress!
Ingredients
For the beef:
• 2–3 lbs beef chuck roast
• 1 can (7 oz) chipotle peppers in adobo sauce
• 1 medium onion, diced
• 4 garlic cloves, minced
• 1 cup beef broth
• 1 tbsp tomato paste
• 1 tbsp ground cumin
• 1 tsp smoked paprika
• 1 tsp chili powder
• 1/2 tsp oregano
• Salt and pepper, to taste
• 2 tbsp olive oil (for searing)
For the tacos:
• Small corn or flour tortillas
• Toppings: diced onion, chopped cilantro, crumbled queso fresco, avocado
slices, lime wedges
Instructions
1. Prep the Beef:
• Season the chuck roast generously with salt, pepper,
cumin, and smoked paprika.
2. Sear the Beef
(Optional):
• Heat olive oil in a skillet over medium-high heat.
Sear the beef on all sides until browned (about 2 minutes per side). This step
adds depth to the flavor but can be skipped for convenience.
3. Assemble in the
Crock Pot:
• Add the diced onion and minced garlic to the bottom
of the Crock Pot.
• Place the beef on top of the onion mixture.
• Pour in the beef broth. Add the chipotle peppers
(with adobo sauce), tomato paste, chili powder, and oregano. Stir slightly to
combine the sauce.
4. Cook:
• Cover and cook on low for 8–10 hours or high for 4–5 hours, until the beef is fork-tender and shreds easily.
5. Shred the Beef:
• Remove the beef from the Crock Pot and shred with two
forks. Return the shredded beef to the pot and mix with the sauce. Let it soak
for 10–15 minutes to absorb the flavors.
6. Assemble the
Tacos:
• Warm the tortillas in a skillet or on a grill.
• Add a generous portion of the shredded chipotle beef
to each tortilla.
• Top with onion, cilantro, queso fresco, avocado, and
a squeeze of lime juice.
