Ingredients
·
2 pounds lean ground beef( healthy option, ground
turkey)
·
3⁄4 cup diced onion
·
3⁄4 cup diced celery
·
1 jalapeƱo seeded and finely diced
·
4 cloves garlic minced
·
1 ½ tablespoons chili powder divided, or to
taste
·
1 teaspoon cumin
·
¾ cup green bell pepper seeded and diced
·
14.5 ounces crushed tomatoes 1 can
·
19 ounces canned red kidney beans drained
and rinsed
·
14.5 ounces canned diced tomatoes with juice
·
1 ½ cups beef broth
·
1 tablespoon tomato paste
·
1 tablespoon brown sugar optional
·
salt and black pepper to taste
Instructions
1.
Place beef (or Ground Turkey) in a skillet over medium heat
and cook until evenly brown, 8 to 10 minutes, add onion, jalapeno, and garlic
and cook for another 2 minutes.
2.
In the same pot add the chili powder, salt and pepper to
taste. Drain any Fat.
3.
Transfer beef to a slow cooker and mix in kidney beans,
celery, bell pepper, celery, decided tomatoes, crushed tomatoes, tomato paste, brown
sugar and finally beef broth. Mix evenly.
4.Cover
and cook on Low for 8 hours or 5 hrs. high
5.
Serve hot using your desired topping.
Notes
Serving
size: 1 1/2 cups
You can
replaced broth (partially)with ½ cup of beer.
Any
ground meat will work in this recipe.
Optional
toppings: sour cream, red or green onion, cheese, jalapenos, cilantro,
avocado & lime wedges, tortilla chips
